Description

Japanese Gyuto Chef's Knife – Fuji Cutlery REIGETSU 210 mm FC-1046

The Gyuto is the Japanese equivalent of the classic European chef's knife. It is designed for working with meat, including cutting large pieces, but it also works excellently with fish, poultry, fruit, bread, and herbs.

The REIGETSU series was developed specifically for home cooks. The design is simple, functional, and highly ergonomic.

Blade Quality

The blade is made of Mo-V stainless steel—completely corrosion-resistant. The edge is finished to #8000, ensuring precise and fast cutting. The steel has a hardness of 57–58 HRC, and the blade is only 1.7 mm thick.

The blade has a double (symmetrical) bevel, which makes it easier to maintain and sharpen at home.

Ergonomics and Comfort

The handle is made of ABS polymer—lightweight, durable, and comfortable to hold. You can use the knife for extended periods without feeling fatigue in your hand.

The knives in the REIGETSU series require no special care and are easy to use—they are equally well-suited for beginners and more experienced cooks.

Frequently Asked Questions

What is a Japanese Gyuto knife, and what is it used for?

The Gyuto is the Japanese equivalent of the classic European chef's knife. It is primarily used for cutting meat—including large cuts—but also works well with fish, poultry, fruit, bread, and fresh herbs. Its versatility makes it one of the most frequently used knives in the kitchen, suitable for everyday use.

What type of steel is used in the REIGETSU FC-1046, and what are its advantages?

The blade of the REIGETSU FC-1046 is made of Mo-V stainless steel. This steel is completely corrosion-resistant and requires no special care during storage. The hardness is 57–58 HRC, which provides a good balance between blade durability and ease of sharpening. The sharpening finish is #8000, resulting in an exceptionally fine and precise cutting edge.

Is this knife suitable for beginner home cooks?

Yes, the REIGETSU series was designed specifically with home cooks in mind. The knives are easy to use, require no special care, and offer excellent ergonomics. The ABS polymer handle is comfortable to grip and allows for extended use without discomfort. Despite its affordability, the knife offers quality appreciated by home cooks around the world.

Can I wash the knife in the dishwasher?

No. Washing in a dishwasher is strictly not recommended for all Japanese kitchen knives, including the REIGETSU FC-1046. High temperatures, harsh detergents, and mechanical impact can damage the blade and handle. We recommend hand-washing with a soft sponge and drying immediately after use.

What kind of cutting board should I use with this knife?

It is recommended to use a plastic or wooden cutting board. Bamboo cutting boards are too hard and can damage the blade. Glass and porcelain surfaces are completely unsuitable—they quickly dull even high-quality knives. The right cutting board significantly extends the life of the cutting edge.

How can I keep my knife sharp for longer?

The key is to sharpen regularly. It’s easier to maintain the knife’s sharpness with short sharpening sessions than to have to do a major sharpening after a long period of use without maintenance. Avoid applying side pressure or twisting the blade while cutting. Proper storage—on a magnetic strip or in a protective sheath—also helps extend the life of the blade.

Where is the Fuji Cutlery REIGETSU FC-1046 knife manufactured?

The knife is manufactured in China, but inspection, final sharpening, and packaging are carried out in Japan. This means that every knife undergoes Japanese quality control standards before it reaches the end consumer. It is precisely this combination that allows the REIGETSU series to offer good quality at an affordable price.
