The Tojiro FC-462 is a compact, fixed-angle knife sharpener from Japan that combines a diamond and a ceramic sharpening section. The result is a sharp knife with minimal effort and no experience required.
How to Use the Tojiro FC-462 Knife Sharpener
Place the sharpener on a flat surface and twist the safety lock—it turns into a handle. Hold the handle firmly and place the base of the knife in the sharpening slot.
- Apply light pressure and pull the knife toward you.
- Repeat the movement 10–20 times for the diamond section.
- With the ceramic sections, you can move the blade in both directions.
Three Steps to Perfect Sharpening
- Step I – Diamond sharpener (very coarse): used for severely dull knives.
- Step II – Ceramic sharpener: for daily maintenance and fine sharpening.
- Step III – Fine Ceramic: for polishing the blade and maintaining sharpness.
After you finish sharpening, wash the knife and the sharpening stone under cold running water. Let the sharpening stone air dry.
Maintenance Tip
We recommend weekly maintenance with about 10 passes through Step III. This keeps the knife extremely sharp without the need for resharpening.
Important
This sharpener is not suitable for serrated blades or those with a single-sided bevel—such as Deba, Yanagiba, and similar knives.
